The BEST Paleo Tortillas
I can confidently talk these up because they meet my tortilla expectations every time! I probably make them at least once a week... Store-bought tortillas, no more!
1 cup full-fat coconut milk (I repeat... full-fat)
1 tbs olive oil
3/4 cup tapioca (arrowroot) flour (use the scoop method, so the flour is more packed in, rather than spooning the flour into your measuring cup)
3 tbs coconut flour
1/4 tsp salt
Whisk the wet ingredients together.
In a separate bowl, mix the dry ingredients together.
Whisk the dry ingredients into the wet ingredients.
Heat your non-stick pan to medium.
Lightly brush it with coconut oil.
With a measuring cup, pour 1/3 cup of the batter into the hot pan and immediately swirl it around so it covers the entire base of the pan.
Cook for 2 minutes 30 seconds.
Flip and cook for one more minute.
Set aside on a plate while you make the rest of the tortillas!
Depending on the size of your pan you will get about 6-8 tortillas from this recipe.
