The BEST Paleo Tortillas

I can confidently talk these up because they meet my tortilla expectations every time! I probably make them at least once a week... Store-bought tortillas, no more! 



  • 2 eggs

  • 1 cup full-fat coconut milk (I repeat... full-fat)

  • 1 tbs olive oil

  • 3/4 cup tapioca (arrowroot) flour (use the scoop method, so the flour is more packed in, rather than spooning the flour into your measuring cup)

  • 3 tbs coconut flour

  • 1/4 tsp salt


  1. Whisk the wet ingredients together.

  2. In a separate bowl, mix the dry ingredients together.

  3. Whisk the dry ingredients into the wet ingredients.

  4. Heat your non-stick pan to medium.

  5. Lightly brush it with coconut oil.

  6. With a measuring cup, pour 1/3 cup of the batter into the hot pan and immediately swirl it around so it covers the entire base of the pan.

  7. Cook for 2 minutes 30 seconds. 

  8. Flip and cook for one more minute. 

  9. Set aside on a plate while you make the rest of the tortillas!

Depending on the size of your pan you will get about 6-8 tortillas from this recipe.
