Slow Cooker Paleo White Chicken Chili
This dish has become a recent favorite. It's Winter here in New Zealand and if living near Antartica weren't bad enough this time of the year (those southerly winds freeze me to the bone), it's extra chilly where we live because we're on the lakefront of Lake Taupo and the winds roll down from the mountains that sit at the other side of the lake from us. As beautiful as it is, I need my food to do their part in warming me up inside! And this does exactly that!
It's quick and easy, taking only 10 minutes to prep. Double the recipe to freeze for a quick meal later on.
Just don't pick the pot up out of the oven with a slippery t-towel... You'll have to choose between scorching your hand and saving the chili or losing the chili... I chose the chili, and now that the pain has subsided I feel like I made the right choice. Maybe? That's why my hands in a bowl of ice water in one of the images below- whoops!
